Thibault Chiumenti

Executive Chef Thibault Chiumenti, has led the culinary direction of The St. Regis Singapore and signature restaurant Brasserie Les Saveurs since July 2019. Armed with over 20 years of culinary experience, Chef Thibault's modern interpretations of contemporary French cuisine is focused on the seasonality as well as sustainability of ingredients - with most ingredients locally sourced. The Brasserie Les Saveurs menu curated by Chef Thibault features traditional French dishes imbued with rich, familiar flavours from France.

Originally from the city of Vaux-Sur-Seine near Paris, France, Chef Thibault credits his voracious interest in the culinary arts to both his paternal and maternal grandmothers - who instilled in him the delight of sharing good food with family from a young age. Serving as inspiration for his future career, Chef Thibault enrolled in culinary school and later went on to work in the 2 Michelin Star "L'Espadon" at the Ritz Paris, followed by the 2 Michelin Star "Restaurant Daniel" in New York under Daniel Boulud. Chef Thibault's first foray in Asia was Bangkok, followed by a stint in Hong Kong, before settling in Singapore.
