Christmas Eve Dinner

For dinner on Christmas Eve, partake in a buffet spread starting with pass-around canapés like Slow-cooked Spanish Octopus Legs with Salsa Verde, and be welcomed by a bountiful selection of luscious seafood, gourmet appetisers and salads, and artisanal charcuterie. At the live station, be treated to Pan-seared Foie Gras with Pear William Compote, Pistachio, Balsamic Gastrique and Brioche, and for mains, delight in à la minute plates such as Roasted Duck Breast with Salardaise Potato, Asparagus and Kenya Beans, and Sauce à l’Orange. Lastly, conclude the fête with a parade of wondrous desserts.

Welcome the arrival of Christmas Day with a sumptuous brunch beginning with an assortment of enticing seafood including Fine de Claire Oysters, chilled Boston Lobster and Alaskan King Crab, and delicate canapés such as Pan-seared Hokkaido Scallop with Celeriac and Black Truffle Sauce. Tuck into delightful main courses prepared fresh from the kitchen, while enjoying Whole Roasted Turkey with Chestnut Stuffing, Cranberry Sauce and Giblet gravy from the carving trolley, and 63°C Organic Egg with Bell Pepper Ragout, Crispy Parma Ham and Black Truffle Emulsion prepared at the live station.

Savour a bowl of hearty Roasted Butternut Velouté with Crispy Pancetta Bits and Black Truffle Whipped Cream, before luxuriating in some Slow-cooked Whole Norwegian Salmon with Herb Potatoes and Lemon-Dill Sauce from the carvery. Served as part of a luscious spread, tuck into mains like Lamb Navarin with Carrots and Baby Radish, alongside local specialties like Salted Egg Tiger Prawns with Curry Leaves.

New Year’s Eve Dinner

As you herald the arrival of the New Year, relish in a luscious dinner spread commencing with butler-passed canapés like Rock Melon Gazpacho with Goat Cheese Espuma and Parma Ham. Alongside these delicate bites, tuck into gastronomic main course highlights like Pan-seared Wagyu Beef Striploin with Cherry Tomato Provençal, Truffle Mashed Potato and Bordelaise Sauce, or Roasted Potato Gnocchi with Sun-dried Tomato Pesto, Pine Nuts, Green Asparagus and Shaved Black Truffle.
